Southern Sweet Potato Soufflé

Whipped sweet potatoes baked with butter, brown sugar, and warm spices, topped with a crunchy brown sugar-pecan streusel. The Thanksgiving side that eats more like dessert.

Ingredients

  • 3 cups mashed sweet potatoes
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup heavy cream
  • 2 large eggs, room temperature
  • 4 Tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt

Instructions

Preheat oven to 350°. Grease an 8×8 baking dish.

In a large bowl, whisk sweet potatoes until smooth. Add brown sugar, granulated sugar, cream, eggs, butter, vanilla, cinnamon, nutmeg, and salt.

Mix until creamy and well blended. Spread mixture evenly into prepared dish.

In a separate bowl, combine pecans, brown sugar, flour, and melted butter. Sprinkle topping evenly over sweet potato mixture.

Bake uncovered for 40 to 45 minutes until center is set and topping is golden. Let rest 10 minutes before serving.
