Ingredients
- 1 unbaked 9-inch pie crust
- 2 cups mashed sweet potatoes (about 2 large)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- ½ cup evaporated milk
- 2 large eggs, room temperature
- 4 Tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ground cloves
- ¼ tsp salt
Instructions
Preheat oven to 350°. In a large bowl, whisk mashed sweet potatoes until smooth.
Add brown sugar, granulated sugar, evaporated milk, eggs, melted butter, vanilla, cinnamon, nutmeg, cloves, and salt. Whisk until fully blended and creamy.
Pour filling into prepared pie crust. Bake 50 to 55 minutes until center is set and a knife inserted comes out clean.
If crust browns too quickly, tent loosely with foil. Remove from oven and cool completely before slicing.
Serving Suggestion Serve with whipped cream or a drizzle of maple syrup.
