Southern Crispy Fried Catfish

Catfish fillets soaked in spicy buttermilk, dredged in seasoned cornmeal, and fried until shatteringly crisp and golden. The Friday fish fry that defines Southern cooking.

Ingredients

  • 4 catfish fillets (6 oz each)
  • 1 cup buttermilk
  • 1 tsp hot sauce
  • 1 cup yellow cornmeal
  • ½ cup all purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for frying

Instructions

Place catfish in a shallow dish. Pour buttermilk and hot sauce over fish.

Cover and marinate in the refrigerator for 30 minutes. In a separate bowl, whisk together cornmeal, flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.

Remove fish from marinade, allowing excess to drip off. Dredge each fillet thoroughly in seasoned coating, pressing gently.

Heat oil to 350°F in a deep skillet. Fry fillets 3–4 minutes per side until golden and crisp.

Transfer to paper towels. Rest 2 minutes before serving.
