Red snapper fillets crusted in a bold Cajun spice rub with smoked paprika and thyme, seared in butter for a crispy, smoky finish. Quick enough for weeknights, special enough for company.

Ingredients

  • 4 snapper fillets
  • 2 Tbsp melted butter
  • 1 tsp paprika
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne
  • ½ tsp thyme
  • 1 tsp salt

Instructions

Combine all spices. Brush fish with butter.

Coat generously with seasoning. Heat cast iron skillet until very hot.

Cook 3–4 minutes per side.
