Smoky Tomato-Glazed Homestyle Meatloaf

Lean ground beef seasoned with sweet peppers, garlic, and diced tomatoes, baked under a sweet-and-tangy ketchup-tomato glaze. Classic Southern comfort with a deeper, smokier finish.

Ingredients

  • 1½ lbs lean ground beef
  • 1 cup sweet peppers, finely processed
  • ½ cup yellow onion, finely processed
  • 1 (10 oz) can diced tomatoes & green chilies, drained
  • 3 cloves garlic, processed
  • 1 large egg
  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • 1½ tsp salt
  • 1 tsp black pepper
  • ½ cup breadcrumbs
  • ¼ cup milk
  • ½ cup ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbsp granulated sugar

Instructions

Preheat oven to 375°. In a large bowl, combine processed peppers, onion, diced tomatoes with chilies, and garlic.

Add ground beef, egg, onion powder, garlic powder, salt, pepper, breadcrumbs, and milk. Mix gently until just combined.

Shape into a loaf and place in a greased baking dish. In a small bowl, whisk together all glaze ingredients until smooth.

Spread half of the glaze over the meatloaf. Bake uncovered for 40 minutes.

Remove from oven and spread remaining glaze on top. Return to oven and bake an additional 10 to 15 minutes until internal temperature reaches 160°.

Let rest 5 minutes before slicing. Serve warm and enjoy.
