Smoked Chipotle BBQ Chicken

Chicken leg quarters rubbed with a smoky BBQ blend, slow-smoked, and glazed with a sticky chipotle-honey BBQ sauce. Big, bold backyard flavor with just enough heat.

Ingredients

  • 6 chicken leg quarters
  • 3 Tbsp yellow mustard (binder)
  • Homemade Smoky Chipotle BBQ Rub Chipotle BBQ Glaze
  • 2 Tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tsp chili powder
  • 1½ tsp garlic powder
  • 1½ tsp onion powder
  • 1½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • ½ tsp cayenne pepper
  • ½ tsp dry mustard powder
  • 1 cup BBQ sauce
  • 2 Tbsp chipotle sauce or minced chipotle in adobo
  • 1 Tbsp honey
  • 1 Tbsp Worcestershire sauce

Instructions

Preheat smoker to 250°. Pat chicken dry with paper towels.

Rub mustard evenly over all sides of chicken. In a bowl, combine all rub ingredients and mix well.

Sprinkle rub generously over chicken, pressing to adhere. Place chicken skin-side up on smoker grates.

Smoke uncovered for 2 to 2½ hours, or until internal temperature reaches 165°. Whisk glaze ingredients together.

During the last 20 minutes of smoking, brush chicken generously with chipotle BBQ glaze. Allow glaze to set and become sticky.

Remove from smoker and rest 10 minutes before serving.
