Slow Cooker Creamy Ranch Chicken (Lightened)

Chicken breasts slow-cooked with ranch seasoning, reduced-fat cream cheese, Greek yogurt, and Parmesan until tender and creamy. A leaner version of the crockpot classic everyone craves.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ cup low-sodium chicken broth
  • 4 oz reduced-fat cream cheese, cubed
  • ½ cup plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (optional garnish)

Instructions

Place the chicken breasts in the bottom of a slow cooker. Sprinkle ranch seasoning, garlic powder, onion powder, and black pepper evenly over the top.

Pour in the chicken broth. Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender and cooked through.

About 30 minutes before serving, add the cream cheese to the slow cooker and cover again, allowing it to soften. Once melted, stir in the Greek yogurt and Parmesan cheese until a smooth, creamy sauce forms.

Shred or slice the chicken and stir to coat well in the sauce before serving. Garnish with fresh parsley if desired.
