Slow Cooker Cajun Jambalaya

One-pot shrimp and sausage jambalaya with rice, peppers, and onions in a white slow cooker

Chicken, shrimp, and smoky kielbasa slow-cooked with long grain rice and bold Cajun seasoning. Hands-off Louisiana comfort food that simmers itself perfect.

Ingredients

  • 1 lb boneless chicken breast, diced
  • ½ lb shrimp, peeled and deveined
  • 10 oz kielbasa sausage, sliced
  • 2 cups long grain rice, rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 Tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp Cajun seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 4½ cups chicken broth

Instructions

Add chicken, sausage, onion, and garlic to slow cooker. Sprinkle with garlic powder, onion powder, Cajun seasoning, salt, and pepper.

Stir to coat evenly. Pour in chicken broth and add butter.

Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours. Stir in rice, cover, and continue cooking on HIGH for 30 to 40 minutes until rice is tender.

Fold shrimp into the slow cooker. Cover and cook an additional 15 minutes until shrimp are pink and cooked through.

Let rest 5 minutes before serving.
