Ingredients
- 4 bone-in, skin-on chicken thighs (skin removed for lighter option)
- 2 tbsp olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
Instructions
Preheat the oven to 400°F and lightly grease a baking dish or line a sheet pan with parchment paper. Pat the chicken dry with paper towels and place in a large bowl.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, parsley, paprika, salt, and black pepper. Pour the mixture over the chicken and rub evenly to coat all sides.
Arrange the chicken skin-side up in the baking dish with space between pieces. Roast for 35–45 minutes, or until the internal temperature reaches 165°F and the outside is golden and slightly crisp.
Let rest for 5 minutes before serving so the juices settle and the flavor deepens.
