“Let all that you do be done in love.” – 1 Corinthians 16:14

Lean ground turkey simmered with wild rice blend, herbs, and Greek yogurt for a creamy one-pan dinner. Lighter than it tastes, hearty enough to satisfy.

Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked wild rice blend
  • 2 ½ cups low-sodium chicken broth
  • ½ cup plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • ½ tsp dried thyme
  • ½ tsp dried parsley
  • ¾ tsp salt
  • ½ tsp black pepper

Instructions

Heat olive oil in a large deep skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened, then stir in the garlic and cook for 30 seconds until fragrant.

Add the ground turkey and cook until browned and fully cooked through, breaking it apart as it cooks. Stir in the uncooked wild rice, chicken broth, thyme, parsley, salt, and black pepper.

Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 35–40 minutes, or until the rice is tender and most of the liquid is absorbed. Remove from heat and stir in Greek yogurt and Parmesan cheese until creamy and well combined.

Let rest for 5 minutes before serving to thicken slightly and deepen flavor.
