Homestyle Meatloaf with Brown Gravy

Lean ground beef blended with sweet peppers, mushrooms, garlic, and onion, baked until tender and smothered in a rich homemade brown gravy. The Sunday meatloaf that defines comfort food.

Ingredients

  • 1½ lbs lean ground beef
  • 1 cup sweet peppers, finely processed
  • ½ cup yellow onion, finely processed
  • 1 cup baby bella mushrooms, finely processed
  • 3 cloves garlic, processed
  • 1 large egg
  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • 1½ tsp salt
  • 1 tsp black pepper
  • ½ cup breadcrumbs
  • ¼ cup milk Brown Gravy
  • 2½ cups beef broth
  • 1½ Tbsp beef concentrate
  • 3 Tbsp butter
  • 3 Tbsp all purpose flour
  • Salt and pepper to taste

Instructions

Preheat oven to 375°. In a large bowl, combine processed peppers, onion, mushrooms, and garlic to create a vegetable binder.

Add ground beef, egg, onion powder, garlic powder, salt, pepper, breadcrumbs, and milk. Mix gently until just combined.

Shape mixture into a loaf and place in a greased baking dish. Bake uncovered for 45 to 50 minutes, until internal temperature reaches 160°.

Let rest 5 minutes before slicing. While meatloaf bakes, melt butter in a saucepan over medium heat.

Whisk in flour and cook 1 minute. Gradually whisk in beef broth and beef concentrate.

Simmer until thickened. Season with salt and pepper to taste.

Slice meatloaf and spoon gravy over top. Serve warm and enjoy.
