Ingredients

Chicken
- 1 lb boneless skinless chicken breasts, sliced
- 2 tbsp olive oil
- 2 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
Vegetables
- 1 cup sweet mini peppers, sliced
- 1/2 cup Vidalia onion, thinly sliced
Instructions
Cook pasta in salted water according to package directions. Drain and set aside.
Season chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat.
Cook chicken 5–7 minutes until golden. Remove and set aside.
In the same skillet, sauté sweet peppers and Vidalia onion 3–5 minutes until tender. Remove and set aside.
Melt butter in skillet. Add garlic and sauté 30 seconds.
Stir in cream and broth. Simmer 3–5 minutes.
Add Parmesan and stir until smooth. Return chicken, vegetables, and pasta to skillet and toss to coat.
Sprinkle red pepper flakes if desired. Garnish and serve warm.
