Sliced sweet potatoes simmered in a buttery brown sugar and vanilla glaze until tender and caramelized. The Southern holiday classic, made simple in a skillet.
Ingredients
- 3 large sweet potatoes, peeled and sliced into rounds
- 4 Tbsp butter
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- Pinch salt
Instructions
Heat a large skillet over medium heat and melt the butter. Add sliced sweet potatoes and toss to coat.
Sprinkle brown sugar and granulated sugar evenly over the potatoes. Stir gently and cook uncovered for 18 to 22 minutes, turning occasionally, until potatoes are fork-tender.
Once softened, drizzle in vanilla and stir to combine. Reduce heat to low and continue cooking 5 minutes until sauce thickens and becomes glossy and gooey.
Remove from heat and let rest 5 minutes before serving.
