Ingredients
- 1 ½ lbs pork tenderloin, trimmed
- 2 tbsp olive oil
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp dried thyme
- ¾ tsp salt
- ½ tsp black pepper
Instructions
Preheat the oven to 400°F and lightly grease a baking dish or line a sheet pan with parchment paper. Pat the pork tenderloin dry with paper towels and place in the prepared dish.
In a small bowl, whisk together olive oil, Dijon mustard, honey, garlic, thyme, salt, and black pepper until smooth. Brush the mixture evenly over the pork, coating all sides.
Roast for 25–30 minutes, or until the internal temperature reaches 145°F. Remove from the oven and let rest for 5–10 minutes before slicing so the juices redistribute.
Spoon any pan juices over the slices before serving.
