A fresh, colorful bowl of crisp greens and garden vegetables in a light homemade vinaigrette — the wholesome side that lightens up any hearty supper.
Ingredients
- 6 cups mixed salad greens or chopped romaine
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup shredded carrot
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the greens, tomatoes, cucumber, red onion, and carrot.
- In a small jar, whisk or shake together the olive oil, vinegar, Dijon, honey, salt, and pepper.
- Just before serving, drizzle the dressing over the salad and toss gently to coat.
- Serve right away, while everything is crisp and fresh.
