Sautéed Chicken Quesadillas

Golden, crispy flour tortillas filled with freshly sautéed seasoned chicken, melted cheese, and tender peppers and onions. A quick, satisfying meal perfect for busy weeknights or casual entertaining.

Ingredients

Sautéed Chicken Filling

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 tsp taco seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • 1/2 cup sweet bell peppers, sliced
  • 1/2 cup onion, thinly sliced

Quesadillas

  • 4 large flour tortillas
  • 2 cups shredded Mexican-blend or cheddar cheese
  • Butter or cooking spray

Instructions

Heat olive oil in a skillet over medium heat. Add diced chicken and season with taco seasoning, garlic powder, cumin, salt, and pepper.

Cook 5–7 minutes until chicken is golden and cooked through. Add bell peppers and onion.

Sauté 3–4 minutes until tender. Remove skillet from heat and set aside.

Heat a clean skillet over medium heat and lightly grease with butter or spray. Place tortilla in skillet.

Sprinkle cheese over half of tortilla. Add chicken mixture, then top with more cheese.

Fold tortilla in half. Cook 2–3 minutes per side until golden and cheese is melted.

Remove, slice into wedges, and serve with toppings.
