Fluffy, fragrant rice brightened with fresh lime and cilantro — a cool, zesty companion to tacos, grilled meats, and anything off the smoker.
Ingredients
- 1 1/2 cups long-grain white rice, rinsed
- 2 1/4 cups water or chicken broth
- 1 tbsp olive oil or butter
- 1 tsp salt
- Juice and zest of 1 lime (about 2 tbsp juice)
- 1/3 cup fresh cilantro, finely chopped
Instructions
- In a saucepan, combine rice, water or broth, oil, and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer 15–18 minutes until the liquid is absorbed and rice is tender.
- Remove from heat and let rest, covered, 5 minutes, then fluff with a fork.
- Stir in the lime zest, lime juice, and chopped cilantro. Taste, add salt if needed, and serve warm.
